Roasted Yams with Quince and Fennel

This is a great sweet and savory dish to complement both of our favorite cravings.

Ingredients

  • 2 Yams, diced
  • 2 fennel bulbs, diced
  • 2 quince, diced
  • Splash of apple cider (approx. 1/8 cup)
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • Kosher salt
  • Browned butter
  • Cinnamon to taste
  • Ground ginger to taste

Directions

  1. Toss yams, quince, and fennel with remaining ingredients, except browned butter.
  2. Roast in preheated 375° F oven for about 45 minutes, until soft and mashy.
  3. Brown the butter in a large pan and then add roasted vegetables to the pan.
    Season with cinnamon, ground ginger to taste, and simmer for another 15 minutes.
  4. Stir with wooden spoon, mashing a little to get flavors and ingredients to infuse.

Halibut and Brussels Sprouts

This is a super meal to have the night before a big meeting or a swim suit competition.

Ingredients

  • 8-10 brussels sprouts, outer leaves removed and cut in half
  • 2 (6 ounce) portions halibut, skin removed
  • Olive oil
  • Sea salt and pepper

Directions

  1. Preheat oven to 375° F,
  2. Toss halved brussels sprouts with 2 tablespoons olive oil, and season with sea salt and pepper.
  3. Place in roasting dish and put in oven for 15 minutes or until outer leaves are crisp and slightly brown and insides are
    tender. Keep warm.
  4. Heat a nonstick skillet over medium high heat and add about 1-2 tablespoons of olive oil to pan. Season both fillets of
    fish with sea salt and pepper, and add to pan.
  5. Sear fish until a light brown crust begins to form, about 5 minutes;
  6. Flip fish and cook on other side until cooked through, about 4 more minutes.

Super Bowl Dip Recipe

This recipe is perfect for Super Bowl Sunday. Take this dip and have something for others to try and definitely for yourself in case the other choices do not feel supportive.

Ingredients

  • 1 can (14 ounce) artichoke hearts (drained and chopped)
  • 1 package (10 ounce) frozen chopped spinach (thawed and drained)
  • 1 container (8 ounce) plain whole fat yogurt
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped green onion
  • 1 clove of garlic (minced)
  • 2 tablespoons red bell peppers (optional)

Directions

  1. Preheat oven to 350° F.
  2. In a bowl, use emulsifying blender to blend in all ingredients except bell peppers and mix well.
  3. Pour into casserole dish.
  4. Bake 20 to 25 minutes. Sprinkle with chopped bell peppers and serve with rice crackers or veggies.

Healthy Egg Nog Recipe

I love warm egg nog during the festive season. Try this recipe so you can get your fix without any extra sugar or inflammation from too much dairy.

Ingredients

  • 6 extra-large egg yolks
  • ½ cup coconut palm sugar
  • 1½ cups almond milk
  • 1 stick whole cinnamon
  • 20 ounces (about 1½ cans) full-fat coconut milk
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon freshly ground nutmeg
  • ¼ teaspoon ground cinnamon
  • 6 to 8 tablespoons rum (optional 🙂

Instructions

  1. In a medium bowl, combine the egg yolks and coconut palm sugar.
  2. Whisk briskly until thickened. Set the bowl aside.
  3. In a medium saucepan over medium heat, slowly heat the almond milk with the cinnamon stick, stirring frequently, until the cinnamon becomes fragrant and the milk has been reduced by about one-third.
  4. Remove the saucepan from the heat, and discard the cinnamon stick.
  5. Pour the reduced milk it very slowly into the egg yolk and sugar mixture, whisking constantly. This is how we temper the eggs, so they don’t scramble.
  6. Return the mixture to the saucepan, and stir in the coconut milk.
  7. Return the saucepan to the stovetop, and simmer over medium heat, stirring constantly, until the mixture begins to bubble a bit and starts to thicken.
  8. Remove the pan from the heat, stir in the vanilla, nutmeg, and ground cinnamon.
  9. Stir in the optional rum.
  10. Chill completely in the refrigerator until ready to serve.
